Tips for even lazier chicken dinners

  • Buy thighs. Boneless or bone-in, thighs stay juicy even if you leave them in a few minutes too long.
  • Keep a rotisserie chicken in the fridge. It turns into quesadillas, wraps, fried rice or soup in minutes.
  • Use seasoning blends. Taco seasoning, Italian seasoning or a good chicken rub save you from measuring five spices.
  • Get an instant-read thermometer. Chicken is done at 165°F. No cutting, no guessing.
  • Cook once, eat twice. Make a double batch and turn the leftovers into pasta or fried rice the next day.

Sheet Pan Chicken and Potatoes Recipe

Recipe card

Lazy Sheet Pan Chicken and Potatoes

Crispy chicken thighs, golden baby potatoes and green beans roasted on one pan. 10 minutes of prep and one pan to wash.

Prep: 10 min · Cook: 40 min · Total: 50 min · Serves: 4

Ingredients

  • 2 lb bone-in, skin-on chicken thighs (6 to 8 thighs)
  • 1 1/2 lb baby potatoes, halved
  • 3 tablespoons olive oil, divided
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried Italian seasoning
  • 1 1/2 teaspoons salt, divided
  • 1/2 teaspoon black pepper
  • 12 oz green beans, trimmed
  • 1 lemon, cut into wedges
  • Chopped fresh parsley (optional)

Instructions

  1. Heat the oven to 425°F (220°C). Line a large rimmed sheet pan with foil or parchment for easy cleanup.
  2. Mix the garlic powder, paprika, Italian seasoning, 1 teaspoon salt and the pepper in a small bowl.
  3. Toss the potatoes on the pan with 1 tablespoon oil and half of the seasoning, then push them toward the edges.
  4. Pat the chicken dry, rub it with 1 tablespoon oil and the rest of the seasoning, and place it skin-side up in the middle of the pan. Roast 20 minutes.
  5. Toss the green beans with the remaining 1 tablespoon oil and 1/2 teaspoon salt. Add them to the pan, stir the potatoes and roast 15 to 20 minutes more, until the chicken reaches at least 165°F and the potatoes are golden.
  6. Squeeze the lemon over everything, sprinkle with parsley and serve straight from the pan.

Notes: Using boneless thighs or chicken breasts? Add them after the potatoes have roasted 10 minutes, so everything finishes together. Leftovers keep 3 to 4 days in the fridge.

Lazy Chicken Dinner FAQ

What is the easiest chicken to cook for dinner?

Chicken thighs are the easiest. They are cheap, full of flavor and very forgiving, so they stay juicy even if you cook them a little too long.

Can I cook chicken from frozen?

Yes, in the oven, air fryer or pressure cooker. Plan on about 50% more cooking time. Do not cook frozen chicken in a slow cooker, because it stays too long at unsafe temperatures. Thaw it in the fridge first.

What can I make with a rotisserie chicken?

Quesadillas, burritos, Caesar wraps, fried rice, white chicken chili, chicken pasta and soups. One chicken usually gives you 3 to 4 cups of meat.

How do I know when chicken is done?

Use an instant-read thermometer. Chicken is safe to eat at 165°F in the thickest part.

What are easy sides for lazy chicken dinners?

Bagged salad, microwave rice, frozen vegetables roasted on the same pan, or a pot of Mexican rice in the rice cooker.
